1 ½ Cups Of Fresh Or Frozen Blueberries
1 Cup Of Oats (I Used Gluten Free Oats)
3 Large Bananas (The Riper The Better)
1 Tablespoon Of Lemon Or Lime Zest
6 Large Eggs
Cooking Spray
WHAT YOU’LL NEED
- A Mixer, Blender, Food Processor Or Nutri-Bullet
- Sheet Pan Or Baking Sheet, Quarter-Sized 9”X 13”
- Zester
- Oven
WHAT TO PAIR IT WITH
- Syrup, Agave, Sugar-Free Syrup Or Honey
- Warm Fruit Compote
- Bacon, Turkey Bacon Or Canadian Ham
- Fresh Sliced Fruit
- Yogurt
PREPARATION
- Preheat Your Oven To 375 F.
- In A Blender Place In Your Oats, Ripe Bananas And Eggs.
Blend Until Smooth And Set Aside.
- Grab Your Baking Sheet And Spray The Bottom And Sides With Your Cooking Spray.
- Pour Your Batter Onto The Baking Sheet And Add The Lemon Zest Spreading Evenly Among The Batter.
- Scatter Your Blueberries Onto The Batter And Place In The Oven.
- Bake For 20-25 Or Until Batter Is Cooked Through And The Top Is Golden Brown.
- Once Baked Let It Rest For 5-7 Minutes And Then Slice It Into Squares.
