SANDWICH PINWHEELS
COSTCO INSPIRED RECIPE
Tortillas, creamy sweet and salty spread with crisp lettuce, tomato and your favorite type of deli protein and cheese! These pinwheels make the perfect snack and all around a perfect bite to have around. My first taste of these were actually in a store called Costco they were so tasty, cheesy and crisp. I just had to remake them. The original Costco recipe uses cranberry sauce, swiss cheese and turkey it’s been the same for years but who can blame them? They are delish. My recipe has certain tweaks to it but not so far off that the original concept strays.

INGREDIENTS
MAKES 10 PINWHEEL SLICES
¼ Cup of softened cream cheese
2 Tablespoons of wild blueberry preserve, strawberry jam or mixed berry jam
2 (10-inch) flour tortillas, whole grain tortilla or lavash flatbread
1 Small whole tomato sliced and halved
Green leaf lettuce of choice cut or torn into 4-inch pieces (I prefer romaine)
4 - 5 Slices of deli style ham or turkey (I used creole smoked turkey)
4 – 5 Slices of deli style provolone cheese, cheddar cheese or Havarti cheese
WHAT YOU’LL NEED
Small bowl
Fork
Dinner knife or small spatula (to spread)
Kitchen knife (for slicing)
Cutting board
Storage container (for meal prep or leftovers)
PREPARATION
- Place the cream cheese and preserve/jam into the small bowl and mix with a fork until all is combined.
- Lay your tortilla of choice onto the cutting board and spread a thick layer of the cheesy spread all over the tortilla almost towards the edges.
- Start by layering 3 – 4 pieces of lettuce in the middle of your tortilla.
- Layer 2 slices of the deli style protein of choice onto the lettuce and then your two slices of cheese either halved or whole.
- Lastly top it off with 2 -3 slices of your sliced tomatoes and let’s begin rolling.
- Starting from one end of the tortilla start by rolling it up tightly towards the other end. The cream cheese helps it hold it together. Cut into bite sized pieces.
- Repeat the same steps to make your second roll.
- You can serve them immediately or place them in the fridge until you’re ready to eat or serve!
NOTE
Store them in the fridge in an air-tight container, zip-lock bag or you can wrap each tortilla rollup tightly in a plastic wrap until ready to be eaten or sliced. These pinwheels can last for up to a week.
