COCONUT PALETAS
This paleta recipe comes from my hometown Barranquilla, with its tropical weather and love of everything coconut. I bring you the easiest and creamiest most scrumptious paleta ever!
Ingredients
Serves 6-8
1 Can of coconut milk
1 Can of sweetened condensed milk
1 Can of evaporated milk
1 Teaspoon of vanilla extract
¾ Cups of coconut shreds
Preparation
In a blender pour in the coconut milk, sweet condensed milk, evaporated milk, and the teaspoon of vanilla extract. Pulse until you see a smooth consistency. Once the mixture is smooth add in the coconut shreds and stir. Pour the mix on to the molds and place in the freezer for 4-6 hours. Enjoy!
Tip- Place the paletas in the freezer for up to one week.
Tip- Defrost for 2-4 minutes before taking paleta out of molds, or lightly place under warm water for 5-10 seconds.
