QUICK MINT CHUTNEY“MINT SAUCE”
This tangy and creamy mint sauce is so fresh and needs only 5 ingredients. This recipe was taught to me by my friend Armaan who was born in Mumbai; he said that this chutney is served in all street food carts as well served with many foods like aloo tikki, samosas, tandoori chicken and vada pav. The traditional mint chutney is made with “Chat Masala” but he said that it wasn’t a common spice in the groceries store and to just switch it up with cumin powder. So I gave it a try and loved it! Easy preparation, bright and refreshing flavors you’ll want to keep this chutney all year around.

MAKES ABOUT 2 CUPS OF CHUTNEY
INGREDIENTS
1 ½ Cups of parsley
[leaves + stems, rinsed and patted dry]
1 ½ Cups of mint leaves
[discard stems, rinsed and patted dry]
4 -5 Garlic cloves [peeled]
2 Teaspoons of cumin powder
1 ¼ Teaspoons of salt or to liking
1/3 Cup of water
1 Tablespoon of plain yogurt, plain Greek Yogurt or vegan coconut yogurt
[this will be used in the blender]
1 Cup of plain “whole milk” yogurt, plain Greek yogurt or vegan coconut yogurt [whisked]
PREPARATION
- In a blender add in your parsley, mint, garlic, cumin powder, salt, water and one tablespoon of the plain yogurt. Blend until smooth. Set aside.
- In a small bowl add in your one cup of yogurt and whisk until smooth.
- Pour your green sauce into the smooth yogurt and mix to combine. Taste and add more salt if needed.
