AVOCADO DRESSING INGREDIENTS
1 Whole Avocado [Diced]
2 Tablespoons Of Olive Oil
3 Tablespoons Of Yogurt [Plain]
2 Tablespoons Of Sour Cream
2 Tablespoons Of Lemon Juice
1 Whole Garlic Clove
4 Tablespoons Of Water
1 Teaspoon Of Salt [Or To Liking]
½ Teaspoon Of Black Pepper [Or To Liking]
PREPERATION
- Place All Your Ingredients Into A Nutri-Bullet, Blender Or Food Processor.
- Blend Until Smooth.
- Taste And Adjust Seasoning To Your Liking.
- Pour Into A Container Or Bowl And Place In The Fridge Until Ready To Use.
CHICKEN SALAD INGREDIENTS
3 Cups Of Cooked Diced Or Shredded Chicken
[I Used A Rotisserie Chicken From My Supermarket, It’s Convenient And Quick]
5 Cooked Strips Of Bacon [Cut Into Small Bite Sized Pieces]
3 Hard Boiled Eggs [Diced Into Small Bite Sized Pieces]
½ Cup Of Red Onions [Finely Diced Or Chopped]
½ Cup Of Celery [Finely Diced Or Chopped]
¼ Cup Of Sweet Gherkin Pickles [Finely Diced Or Chopped]
½ Cup Of Tomatoes [Finely Diced Or Chopped]
4 Ounces Of Roquefort Cheese, Blue Cheese Or Smoked Dried Gouda Cheese
[Diced Small Or Crumbled]
SERVE IT WITH…
- 1 Large Head Of Romaine, Frisee Or Boston Lettuce
[Washed And Dried, You Can Use It As A Bed Of Lettuce Or Chop It Up For A Salad]
- Sliced Cucumbers
- Brioche Bun [Toasted]
CHICKEN SALAD PREPARATION
- In A Medium Bowl Add In Just Your Chicken And About ¼ Cup Of Avocado Dressing. Mix With Your Hand Or Fork And Set Aside.
- In A Large Bowl Add In Your Pickles, Onions, Celery And Tomatoes. Mix With Your Fork And Season With Salt And Pepper.
- Take A Large Handful Of Seasoned Chicken And Place It Into The Veggie Bowl. Add A Bit Of Bacon And A Spoonful Of Dressing And Mix. Add A Bit Of Eggs And Mix Again.
- Repeat These Steps Above But Using The Remainder Of The Ingredients Including The Chicken And Dressing [Use The Dressing To Your Liking]. The Key Is To Do This By Two Parts So That Every Ingredient Gets Equal And Consistent Flavor!
- Serve It On A Bed Of Lettuce And Sprinkle The Top Of Your Chicken Salad With Your Diced Or Crumbled Cheese Of Choice.
