SHRIMP IN ZESTY TOMATO SAUCE
Ingredients
Serves 4
1 Pound of large shrimp (deveined, peeled with tails left on)
1 Teaspoon of salt (shrimp seasoning)
1 to ยฝ Teaspoon of black pepper (shrimp seasoning)
4 Tablespoons of olive oil
1 Medium yellow or Spanish onion (thinly sliced)
5 Garlic Cloves (slivered or minced)
1 Medium green pepper (thinly sliced)
ยฝ to 1 Teaspoon of red pepper flakes
2 to 3 Cups of Marinara sauce (homemade or store bought)
Optional
1 Tablespoon of butter
4 Tablespoons of flat leaf parsley (chopped or hand picked)
Note
In the video I use 3 tablespoons of chopped flat leaf parsley and 3 tablespoons of whole parsley leafโs.

Shrimp Preparation
-Place your cleaned shrimp into a large bowl and season with salt and black pepper. Toss well and set aside.
-In a large skillet pour in your 2 tablespoons of oil over a medium heat.
-Once the pan gets hot add in your thinly sliced onions and thinly sliced pepper, sautรฉ for 2 minutes, veggies should still be a bit crisp and โal denteโ.
-Remove the onions and peppers with a slotted spoon or tongs, and place them onto a large plate or large bowl. Set aside.
-In the same pan add in the remainder of the 2 tablespoon of oil and turn the heat to high. Place in your slivered garlic, red pepper flakes and shrimp and sautรฉ for 2 minutes or until slightly golden.
-Transfer the shrimp onto the same large plate or bowl that the veggies are in and set aside for later use.
-Reduce the heat to medium and in the same skillet pour in your marinara sauce, stir and simmer just until the marinara is heated through (2-4 minutes.)
-Once the sauce is heated add in the shrimp, onion and pepper mix into the sauce and cook/stir for 2 minutes.
-Serve and Enjoy!!!
Optional โ You can add 1 tablespoon of butter at the end and stir until butter dissolves in the mix. This will add a smoothness to the dish.
Optional โ Add flat leaf parsley on top of the final dish to bring color and flavor to it. You can do a half chopped parsley and half hand picked parsley, toss together both and add it to the top of the dish.
