Perfect Meal For These Autumn And Winter Days! You Can Even Meal Prep This Whole Meal Or Just Make It Ahead Of Time. In This Video Tutorial I Will Show You How You Can Turn Simple Ingredients Into An Awesome Meal. Most Of The Ingredients Here Are Catered For All Types Of Grocery Shopping, There’s No Fancy Out Of The Box Ingredient Or Spices. Let’s Get Started!

FOOD TUTORIAL


 MAIN INGREDIENTS


1 Lb. Lean Ground Beef 

2 Tablespoons of olive oil

1 Cup Of Onions, Small Dice (1 Medium Onion)

½ Cup Of Shredded Or Diced Carrots 

(I Used Store Bought Shredded Carrots, Convenient And No Mess) 

1 Cup Of Fresh Red Or Yellow Pepper, Medium Dice (1 Medium Pepper)

3 Cups Of Summer Squash Or Zucchini, Medium Dice (1 Or 2 Small Squash Or Zucchini)

2-3 Tablespoons Of Ketchup Or To Liking

1 ½ Cup Of Shredded Cheddar Cheese, Gouda Cheese Or Pepper Jack Cheese 

“SPICE MIX” FOR THE GROUND BEEF INGREDEINTS

 1 Teaspoon Of Smoked Or Sweet Paprika

½ Teaspoon Of Ground Clove

1 ½ Teaspoon Of Black Pepper Or To Liking

1 Teaspoon Of Dried Oregano

2 Teaspoons Of Salt Or To Liking

1-2 Tablespoon Of Balsamic Vinegar Or To Liking

SWEET POTATO INGREDIENTS

 4 Large Sweet Potatoes

Cooking Spray Or Oil Of Liking

Salt, Optional 


PREPARATION

- Preheat Your Oven To 400 Degrees Fahrenheit.

- Give Your Potatoes A Thorough Wash And Scrub. Once Done Cleaning Pat It Dry With A Paper Towel.

- Using A Fork Or A Knife Poke Holes Into The Sweet Potatoes. 

- In A Medium Sheet Pan Or Cookie Sheet, Place Aluminum Foil Or Parchment Paper On Top For Easier Clean Up.

- Place Your Potatoes Onto The Sheet Pan And Spray Your Oil Of Choice On Them. If Using Regular Oil Use About 1 Tablespoon. Massage Your Potatoes To Coat Them.

- Bake In The Oven For Approximately 40 To 60 Minutes, Meanwhile This Bakes Let’s Cook The Ground Beef. (See Sweet Potato Notes)

- In A Medium Bowl Add In Your Ground Beef And All The “Spice Mix” Ingredients Including The Balsamic Vinegar (See Above). Mix Until All Is Combined.

- Turn Your Stovetop To A Medium High Heat And In A Large Sauté Pan Or Large Skillet Add In Your Olive Oil. Let The Oil Come Up To A Medium Heat And Add In Your Onions, Carrots And Peppers. Sauté And Add A Generous Sprinkle Of Salt On The Veggies, Cook The Veggies For 3-5 Minutes Or Until Translucent. Add in your ground beef and mince with a wooden spoon. 

- Cook the ground beef partially for 7 minutes, then add in your 2-3 tablespoons of ketchup (mix) and add in your diced zucchini or squash, mix and cook for another 10 minutes. Once cooked turn of your stovetop and set aside.

- When the sweet potatoes are done baking, take them out of the oven and carefully make a slit right in the middle of each potato, with a fork fluff up each potato and carefully spoon the veggie spiced ground beef into each potato (place as much or as little as you’d like). 

- You can store the leftover spiced veggie ground beef for up to 4 days (air-tight containers work best for this).

- Sprinkle the shredded cheese evenly onto each potato and place back in your oven at a broil setting (low broil preferably) for 5 -7 minutes this will melt the cheese and create a crispy crust on top! 


- Serve with a dollop of creamy horseradish sauce and chopped parsley. Enjoy!

CREAMY HORSERADISH SAUCE

½ Cup of sour cream

3 tablespoons of horseradish puree  

½ teaspoon of salt

- In a small bowl add in sour cream, horseradish and salt. Mix until combine and serve.

- This sauce can be stored in the refrigerator for up to 3 days. 

SWEET POTATO NOTES

- Test The Doneness By Piercing A Fork Inside The Potato, If It Pierces Right Through Then It’s Done. If not leave in the oven for a couple of minutes until done.

- For This Recipe I Recommend Using Sweet Potatoes That Are A Medium To Large Size, I Do Not Recommend Those With Extra-Large Sizes We Want The Potatoes To Cook Evenly And Consistently And All At The Same Time While Baking.
