ETON MESS WITH PASSION FRUIT & STRAWBERRY SAUCE


This classic British dessert made of whipped cream, store-bought meringues, strawberries and passionfruit make this recipe an impressive dessert for valentines day! So many layers of flavor, from the crunchiness to the sweet and sour flavors of the sauce to the lovely presentation to show case your creation!




SERVES 2 - 3


INGREDIENTS

7 – 12 Meringue cookies, crushed with your hand into bite size pieces and leave 3 or 4 whole for decoration [store-bought]

Lemon zest [optional] 



WHIPPED CREAM PREPARATION 


1 Cup of COLD heavy whipping cream

2 Tablespoons of granulated white sugar

½ Teaspoon of vanilla extract

 

- In the bowl of your electric mixer, fitted with the whisk attachment, place the whipping cream and sugar. Beat, on high speed, until stiff peaks form.

 - You can also use a hand mixer, nutribullet or beat by hand with a wire whisk.

 - Keep in the refrigerator until ready to use.


STRAWBERRY AND PASSIONFRUIT SAUCE


Makes 1 Cup

 3 Teaspoons of corn starch

5 Tablespoons of warm water

½ Cup of passion fruit pulp seeds included [4 passion fruits]

1 Cup of chopped strawberries

¼ Cup of granulated white sugar

 

- In a small bowl or cup add in your corn starch and water and whisk with a fork until combined.

 - Turn your stovetop to a medium heat and in a small pot add in your cornstarch/water mixture with your passion fruit pulp and chopped strawberries. Add in your ½ cup of sugar and stir.

 - Cook for 5-7 minutes or until mixture turns bubbly and thick.

 - Set aside and let it cool.

 

 PRESENTATION


 - Layer cream, meringues, then strawberry and passionfruit sauce mixture into your preferred glasses or bowls. Keep making these layers until the glass or the bowl are full.

 - You can decorate with fresh chopped strawberries, passion fruit pulp and lemon zest.
