GARLIC & ROSEMARY LAMB CHOPS
Sizzling lamb chops with garlic, red pepper and rosemary make this recipe so flavorful. This 15-minute meal with minimal ingredients make this the perfect lunch or dinner! Pair this with my tangy mint chutney sauce and you’ve got yourself a perfect Chef’s meal.

SERVES 2
LAMB INGREDIENTS
1 Lb. [one pound] bone-in lamb chops “frenched & trimmed”
[sliced in between each bone to make single serving chops and pat dry the chops]
Salt
Freshly ground pepper
2 Tablespoons of olive oil
3 Sprigs of fresh rosemary
½ Teaspoon of crushed red pepper flakes
7 Garlic cloves [halved]
1 Tablespoon of cold butter [cubed into four pieces]
PREPARATION
- Season both sides of all chops with salt and fresh pepper.
- Turn your stovetop to a medium high heat and in a large skillet or “cast iron” skillet add in your olive oil; let the oil become hot but not smokey.
- Add the rosemary, red pepper flakes, garlic and lamb chops.
- Cook for 2-3 minutes or until the bottom is seared and brown. Flip to the other side and add in your cubed butter; cook for another 2-3 minutes.
[You can baste this dish with a spoon but this is optional]
- Plate your lamb chops and serve Immediately!
Pair these lamb chops with my easy and quick mint chutney sauce
QUICK MINT CHUTNEY “MINT SAUCE”
MAKES ABOUT 2 CUPS OF CHUTNEY
INGREDIENTS
1 ½ Cups of parsley
[leaves + stems, rinsed and patted dry]
1 ½ Cups of mint leaves
[discard stems, rinsed and patted dry]
4 -5 Garlic cloves [peeled]
2 Teaspoons of cumin powder
1 ¼ Teaspoons of salt or to liking
1/3 Cup of water
1 Tablespoon of plain yogurt, plain Greek Yogurt or vegan coconut yogurt
[this will be used in the blender]
1 Cup of plain “whole milk” yogurt, plain Greek yogurt or vegan coconut yogurt [whisked]
PREPARATION
- In a blender add in your parsley, mint, garlic, cumin powder, salt, water and one tablespoon of the plain yogurt. Blend until smooth. Set aside.
- In a small bowl add in your one cup of yogurt and whisk until smooth.
- Pour your green sauce into the smooth yogurt and mix to combine. Taste and add more salt if needed.
