BBQ CHICKEN PUFF PASTRY PIZZA


Shredded chicken, barbecue sauce, mozzarella and gouda cheese make these flavors combine so well together. Add the slight crispiness of the puff pastry and “OH LA LA” it’s so good! These individual personalized savory BBQ chicken “pizzas” on puff pastry are the perfect semi-homemade treat yourself lunch, dinner or weekend meal!


SERVES 4



INGREDIENTS


2 Whole sheets of frozen puff pastry [store bought]

2 Tablespoons of olive oil or melted butter [for brushing the pastry dough]

1 Cup of your favorite barbecue sauce

1 ½ Cups of cooked shredded chicken [see notes]

1 Cup of mozzarella cheese [grated or shredded]

1 Cup of gouda or cheddar cheese [grated or shredded]

½ Cup of thinly sliced red onion

1 Tablespoon of dried oregano

1 Teaspoon of red pepper flakes [optional] 


FOR SERVING

- Ranch Dressing

- Chopped cilantro

- Arugula

-  Sliced Chives or scallions

 MAKE IT YOUR OWN!


 NOTE

For the chicken, you can use store bought rotisserie chicken and shred what you need, the next is simply using two chicken breast and baking it or boiling it in seasoned water then shredding it. Have leftover chicken from last nights dinner? Then go ahead and use it!



PREPARATION


- Preheat your oven to 400 degrees F. 

- Line a large sized baking sheet with parchment paper, a baking mat or non-stick foil and set aside. 

- Thaw your store-bought puff pastry at room temperature for an hour or leave it in the fridge overnight.

- Place your thawed out puff pastries on your cutting board and open them carefully.

With your knife, slice each puff pastry sheet in the middle. You should end up with 4 sheet slices. 

- Place your puff pastry slices onto your prepared baking sheets, making sure to leave a bit of space in between each one.

 - Brush the tops of your puff pastry with your oil or butter. 

- Using a fork poke small holes on the sheets of puff pastry.

- Spread a thin layer of barbecue sauce in the middle and spread evenly. Repeat for all.

- In a medium bowl add in your shredded chicken and 3 – 4 tablespoons of barbecue sauce plus a bit of salt and black pepper to taste, mix everything together and set aside.

- Start by evenly spreading your chicken onto the puff pastry sheets. Next sprinkle the tops with your cheeses, season with the dried oregano and red pepper flakes. Lastly top it off with the thinly sliced onions. Repeat this for all the “pizzas”

 - Bake for 10 to 15 minutes or until the cheese is melted and the top is a crispy golden-brown color.

- Once baked let the pizza set for a 5 - 7 minutes before slicing it.

 - Before serving you can garnish it with your topping of choice like scallions, chives, arugula or drizzle the tops with ranch dressing.
