TURMERIC SPICED YELLOW RICE

Ingredients

Serves 4

       1 Cup of jasmine rice

      2 Cups of water

      3 Cloves of garlic [minced]

      ¼ Cup of white onion [chopped]

      1 Tablespoon of Turmeric [spice powder]

      1 Teaspoon of ginger [spice powder]

      1 Tablespoon of olive oil

      ¾ Teaspoon of salt [to liking]

      ¼ Cup of pine nuts [toasted, see tips]

      ½ Cup of raisins

 Optional

¼ Cup of scallions [thinly sliced]



 Preparation

In a colander or chinois, wash the one cup of rice and set aside. In a medium pot pour in the olive oil and turn the heat to a medium-high. Add in the onions, garlic and ginger powder. Sauté the mix until translucent. Place the uncooked rice into the pot and stir. Pour in the two cups of water plus the toasted pine nuts, turmeric, raisins and salt. Mix and let it cook without a lid, until the top of the rice has created holes 5-6 minutes; when that happens stir the rice and place a lid on top. Set your stovetop on low-heat and let it cook for 6-8 minutes more. Serve and enjoy! 

Tips On Toasting Pine Nuts – Place a small dry pan onto the stovetop and bring it to a medium-heat. Once the pan heats up add in your pine nuts and sauté for a minute.

Tip – When serving your rice you can add the thinly sliced scallions on top to give it a pop of color.
