SPANISH TOMATO BREAD



For Today’s Recipe I Wanted To Share I Classic But With A Different Twist On What I Usually Ate When I Lived And Worked In Barcelona. I Learned How To Make The Traditional “Pa Amb Tomaquet” Which Is “Pan Con Tomate” In Spanish Terms. The Recipe’s Essential Ingredient Is The Tomato From Their Region Called “Tomaquets De Penjar” Which Are “Hanging Tomatoes” That Have Been Harvested For Over 5 Months, The Rest Of The Ingredients Consist Of Bread, Oil And Salt All These Ingredients Are Literally Rubbed Into The Warm Slice Of Bread And Served. In My Version I Used Ripe Vine Tomatoes, Garlic, Whole Milk Mozzarella, Salt, Black Pepper And Olive Oil. Yes It’s Wildly Different But So Good And So Filling!

I Make My Version For Any Type Of Occasion. I’ve Had This For Breakfast With A Cup Of Coffee, For Lunch With A Side Salad Or Soup And For Dinner I Usually Go For A Bit Of Red Wine Accompanied By A Small Variety Of Olives And Dried Meats Like Prosciutto Or Jamon Serrano If Am Feeling Extra Fancy.

INGREDIENTS


1 Long Loaf Of Ciabatta, Sourdough Or French Baguette

9 Oz Whole Milk Mozzarella

(Make Sure The Mozzarella Is Low Moisture And Without Any Liquid To It, My Go To Brand For This Recipe Is The Polly-O Mozzarella Cheese Chunk)

2 Large Cloves Of Garlic

6 Small Ripe Vine Tomatoes, sliced in half

3 Tablespoons Of Olive Oil, For Drizzling

Black Pepper

Salt


 WHAT YOU’LL NEED


- Food Processor, Nutri-Bullet, Blender Or Food Chopper

- Oven For Broiler

- Spoon

- Knife

- Cutting Board

- Small Bowl

- Cookie Sheet Or Baking Sheet

(sheet size depends on how many slices of bread your making)


PREPARACION


 - Position Your Oven Rack A Few Inches Below Your Broiler. Turn Your Broiler On To A Low Setting.

- Using Your Knife Slice Your Baguette Into 1 Or ½ Inch Thick Slices. You Can Slice Them Horizontal Or Diagonally The Choice Is Yours.

- Place Your Sliced Bread Onto Your Cookie Sheet Or Baking Sheet And Set Aside For Later Use.

- Slice Your Mozzarella Into Thin Slices And Set Aside.

- Place Your Garlic Cloves Into Your Food Processor And Pulse Until Finely Minced. 

- Add In Your Sliced Ripe Vine Tomatoes Into Your Food Processor And Pulse/Blend For A Couple Of Seconds. We Want The Tomato To Be Chunky And Diced. Do Not Over Mix As We Do Not Want A Puree. Once Done Place It Into A Small Bowl And Set Aside.

- Let’s Season Our Sliced Bread! Start Off By Drizzling The Top Side Of The Bread With Olive Oil And Seasoning It With Ground Black Pepper And Salt. Place Inside Your Broiler And Toast Until Golden Brown, Just A Tip Please Keep An Eye On The Bread As It Tends To Burn Quickly Under The Broiler This Step Usually Takes Me A Minute.

- Once The Bread Is Toasted Place It On Your Countertop And Add About 2 To 3 Spoonful’s Of The Tomato And Garlic Mix Onto The Bread. Top Each Tomato Bread With A Slice Of Mozzarella And Season Generously With Black Pepper.

- Place Back Into Your Broiler For 6-7 Minutes Or Until Cheese Is Bubbly And Melted.
