INGREDIENTS


1 Pound Yukon Gold Or Russet Potatoes, Peeled

(I Used 6-7 Small To Medium Potatoes)

Cooking Spray

1 Large Red Or White Onion, Thinly Sliced

6 Medium Sized Tomatoes, Sliced Into ¼ Inch Rounds

2 ½ Cups Of Marinara Or Tomato Sauce (Store-Bought Or Homemade)

Black Pepper

Salt

2 Tablespoons Of Dried Oregano

2 Tablespoons Of Paprika

1 Teaspoon Of Dried Mustard (Optional)

8 Slices Of Deli Style Mozzarella, Gouda Or Provolone Cheese

1 Cup Of Shredded Mozzarella Or Gruyere Cheese

  

WHAT YOU’LL NEED

 - Baking Dish Or Gratin Dish, 9 X 13-Inch Or 8 X 8-Inch

- Potato Peeler

- Oven

- Extra-Large Bowl

- Knife

- Cutting Board

- Foil Paper



PREPARATION


 Place The Oven Rack In The Middle Of Your Oven And Preheat It To 375 F Degrees.

 - Add The Peeled Potatoes Into An Extra-Large Bowl And Fill It With Cold Water Until The Potatoes Are Submerged. This Step Will Prevent The Potatoes From Turning Brown.

- Using A Mandolin Or A Very Sharp Knife Start By Slicing Your Potatoes. If Using Your Knife Slice The Potatoes Crosswise Into ¼ Inch Slices. If Using A Mandolin Set It At 1/8-Inch Thickness We Want It A Little Bit Thinner Than The Regular Slicing. Once Potatoes Are Sliced Place Them On A Large Plate And Set Them Aside. 

 - Spray The Bottom And Sides Of Your Baking Dish With The Cooking Spray And Add In Your Marinara Sauce. Spread Evenly To Coat The Bottom Of Your Baking Dish. Season The Sauce With Black Pepper, Salt And Oregano.

- Start By Layering Your Potatoes Onto The Marinara Sauce Making Sure To Overlap In Between Slices. Once The First Layer Is Complete Season The Potatoes With Black Pepper, Paprika And Salt.

- Sprinkle The Thinly Sliced Onions On Top And Your Sliced Tomatoes On The Sides Of Your Baking Dish, Add Another Layer Of Sliced Potatoes On Top And Season With Black Pepper, Oregano And Paprika. Repeat The Same Steps For The Last Layer But Placing The Sliced Tomatoes Throughout The Dish Evenly. Season The Top Generously With The Dried Mustard And Oregano.

 - Add Your Slices Of Cheese Evenly And Finish It Off With An Even Coating Of Shredded Cheese. Season Oregano, Paprika, Mustard Powder, Black Pepper And Salt.

- Cover Your Baking Dish With Foil And Place It In The Oven For An Hour Or Until The Potato Is Knife Tender. Once The Hour Is Done Remove The Foil And Let It Crisp Up Until Golden Brown For About 20-25 Minutes More. Remove From The Oven And Serve Right Away!
