SPINACH AND WALNUT PESTO PASTA

Serves 3

Ingredients

1 |8oz.| Box of spaghetti

4 Cups of fresh spinach |loose leafs|

¼ Cup of walnuts |toasted|

2 Cloves of garlic

3 ½ Tablespoons of parmesan cheese

½ Cup of olive oil

Black pepper |to liking|

Salt |to liking|

Tools

Blender or food processor

Small sauté pan

Medium pot

Large mixing bowl



Preparation

In a medium pot cook the pasta according to the package. Meanwhile the pasta is being cooked, start by

making your spinach and walnut pesto sauce. Place your small sauté pan onto the stovetop and turn it to a

medium heat; make sure the pan has no oil or water, it needs to be dry for the walnuts to toast up. Place the

walnuts onto the sauté pan and toast for one to two minutes, you’ll want the walnuts to toast not turn dark.

Once the walnuts are toasted place aside for later use. In a food processor or blender put in your spinach,

toasted walnuts, garlic and parmesan cheese pulse until it turns to a paste. Slowly start by adding your

olive oil and pulse once again. You want to make sure to slowly drizzle in your olive oil to avoid large

clumps. Once the paste looks like a pesto sauce, pour it into your mixing bowl. Place the drained spaghetti

into the mixing bowl and toss to cover all the pasta with the spinach pesto sauce.
