EASY WONTON SOUP

QUICK SEMI-HOMEMADE LUNCH

This quick and easy under 15-minute soup has so many textures, flavors and heartiness to it. Sliced veggies, broth poached eggs, semi-homemade gyoza, hot broth and staple store-bought sauces make this dish so filling and so cozy!



INGREDIENTS  

5 Cups of vegetable broth or chicken broth 

[store-bought is fine just make sure it’s low sodium]

1 Teaspoon of sesame oil

1 Tablespoon soy sauce [low sodium]

2 Teaspoons of coconut aminos

½ Teaspoon of sriracha sauce 

Ginger stir-in paste [trade-joes tube]

½ Cup of thinly sliced yellow pepper or half a pepper of your choice

½ Cup of white or Spanish onion thinly sliced

¼ Cup of chopped or sliced green onions 

[save a bit of green onions for the finishing garnish]

1 Lime [quartered, we want the fresh juice]

8 - 10 chicken or pork gyoza pot-stickers [4-5 gyoza per person]

2 Large eggs [one per person]

GARNISHES 

Cilantro leaf’s 

Crispy shallots or crispy onions 

Sliced green onions

Chili Garlic Sauce

Sambal



PREPARATION

 - Turn your stovetop to a medium high heat and in a medium or large pot pour in your sesame oil and let it come to a mild heat. Add in your onions, peppers, ginger stir-in paste and scallions; stir until the veggies look a bit translucent.

 - Pour in your broth and stir. Add in your soy sauce, coconut aminos, fresh lime juice and stir once again.

- Add in your gyoza/wontons into the broth and turn down your heat to a medium. Let everything simmer for 7-9 minutes.  

- Crack in your eggs into the simmering soup, making sure to leave enough space in between the eggs so they cook separately. Don’t stir let everything simmer and cook for another 2-3 minutes.

 - At this point turn off your stovetop and add in your sriracha. Taste to season if you need to adjust the flavor. If you’d like to add more soy sauce, coconut aminos or even sambal go ahead and do it! Serve and add in your favorite toppings.

My go to toppings are chopped sambal, cilantro leaf’s, sliced green onions and either crispy onions or crispy shallots.
