COCONUT AND MANGO CHIA SEED PUDDING

This chia seed pudding recipe is by far one of my favorites, the flavors remind me of a cool tropical morning with flavors like coconut and mango! The different textures from the coconut flakes, to the hearty chia pudding with that extra zing of the creamy mango puree. All those layers of flavors make this a perfect morning go to! You can make this two days in advance for any gathering and you can even meal prep this and it will last you a whole week, make this your own by adding your favorite diced fruits and layering as you’d like.

     SERVES 4

    INGREDIENTS

2 Cups of coconut milk

(canned coconut milk, almond, soy or oat milk)

½ Cup + 3 tablespoons of black or white chia seeds

½ or 1 Cup of unsweetened coconut flakes

 (depends on how coconutty you like it)

3- 4 Tablespoons of maple syrup (honey, agave or sugar-free syrup)

1 Tablespoon of vanilla extract or coconut extract

2 Medium ripe mangoes

PREPARATION

In a large bowl pour in your milk and add in your chia seeds. Whisk or stir vigorously for 3 minutes or until the mix becomes a bit thick. Once done cover the bowl and place it in the refrigerator for a minimum of one hour or leave it overnight.

 Meanwhile, cut and scoop out the flesh of your mango and place the fruity meat inside of your food processor or blender. Whiz away until it becomes a thick puree. Place the puree in the fridge until ready to use.

 Take out your chia seed pudding from the fridge and add in your vanilla or coconut extract, 3-4 tablespoons of your syrup of choice and lastly the ½ to 1 cup of coconut flakes depending on how coconutty you like it, I really love coconut so I put the one cup inside the pudding. Mix evenly with your spatula or fork so all of the flavors incorporate and now will start with the plating.

 In your mason jars, mugs, bowls or to-go containers start by creating layers to your chia seed pudding, start dividing your pudding evenly. I like adding the chia pudding first, then adding a layer of mango puree and then adding my diced fruit of choice and finishing it off with coconut flakes on the tops of each jar, bowl or container. I keep repeating these steps until all the layers are done. Store in fridge, serve or enjoy right away!
