Lemon & Lime Chicken

Ingredients

2 Whole chicken breast {butterflied & opened}

4 Limes {sliced}

4 Lemons {sliced}

2 Tablespoon of olive oil

1 Whole bulb of garlic {sliced in half}

¼ Teaspoon of oregano

¼ Teaspoon of cumin

¼ Teaspoon paprika

¼ Teaspoon of sea salt

¼ Teaspoon of black pepper {optional}

¼ Cup of scallions {thinly sliced}

Preparation

 Preheat your oven to 375 F degrees. In a small bowl add in all the spices and mix {set aside}. On a sheet pan place the aluminum foil {easy clean up} and add a bed of limes and lemons on the bottom of the sheet pan. Place the chicken breast on a board and sprinkle the mixed spices on both sides. Once done, place the chicken breast on the top of the bed of citrus and add the halved garlic bulbs; drizzle the olive oil on top and place it in the oven for 35-40 minutes or until done.Serve and enjoy!

Tips- When the chicken is cooked, I like removing the garlic bulbs and squeezing out the garlic cloves, then I simply add those tiny morsels on top of the chicken before serving.
