Quick Olive & Chicken Salad

Ingredients
  • 1 Cup of chicken breast {cooked & cubed}
  • ⅓ Cup of Mayonnaise
  • 1 Tablespoon of mustard
  • ⅓ Cup of pitted green olives {chopped}
  • ¼ Cup of red onions {chopped}
  • ⅛ Teaspoon of salt
  • ¼ Teaspoon of black pepper
Preparation

In a small bowl combine the mayonnaise and mustard. Stir and set aside. In a medium bowl place the chicken, onions, green olives and the creamy dressing together. Mix everything well and place it in the fridge until your ready to serve it. 

Tip- In a small pot place in the raw chicken breast; fill it with water until the chicken is submerged. Cook the chicken at a low simmer for 10-15 minutes. Once chicken is cooked, pat it dry with a paper towel and cube the chicken for later use.

Tip- You can stuff your pita bread, wrap or hoagie with this creamy chicken salad.
