Free-Style Alfredo Pasta

Serves 4 Vegetarian Free-Style Alfredo Pasta

Ingredients
  • 1 Cup of white onion {finely chopped}
  • 1 Tablespoon of garlic {finely minced}
  • 1 ¼ Cup of baby bella mushrooms {medium chop, optional}
  • 3 Teaspoons of olive oil
  • 1 Can of table cream {7.6 Fl. Oz. or 1 cup}
  • 1 ½ Teaspoon of salt
  • ½ Teaspoon of white pepper Pinch of Nutmeg Linguine box {1lb.}
  • Parmesan cheese {optional garnish}
Preparation

Bring 4 - 6 quarts of water to a rolling boil. Add salt to taste {optional}. Add dry pasta to the boiling water and stir gently{cook according to the package directions}. Meanwhile, the pasta cooks take a large sauté pan and add the olive oil at a medium-low heat. Add in the onions, garlic, mushrooms and ½ teaspoon of salt to the pan. Saute until you see the vegetables sweating {4-6 minutes}. Add in the cream and stir for about 5 minutes. Add in about ¼ cup of pasta water, one teaspoon of salt, white pepper, and nutmeg. Stir and let it simmer for about 3-5 minutes. Drain out pasta and pour it over the Alfredo sauce. Mix well and serve.

Tip- You can serve the pasta with fresh parmesan cheese and a bit of fresh basil.

Tip- When your adding the pasta water do it slowly so you can eyeball how thick or thin you want the sauce to be.
