Almond Rice Gratin

Ingredients
  • 1 Cup of rice
  • 2 Cups of water {or chicken broth}
  • 1 Tablespoon of canola oil
  • 2 Garlic cloves {minced}
  • ¼ Teaspoon of garlic powder
  • ½ Teaspoon of salt
  • ½ Cup of almonds {roasted or dry-sauté}
  • ½ Cup of mozzarella {shredded}
Preparation

Set the broiler to medium-high. In a medium pot add in the oil, minced garlic, rice, and stir on a medium-high heat for two minutes. Pour in the 2 cups of water {or broth} and add in the salt and garlic powder. Cook the rice for 8-10 minutes or until you see that the rice forms hollows on top. Meanwhile, in a small cookie sheet place the raw almonds and toast them under the broiler for 2-4 minutes. Once the almonds toast chop them and set them aside. Stir the rice and bring the heat to low. Top the pot with a lid and let the rice cook for another 8-10 minutes. Add the almonds to the coooked rice and mix. In a medium-casserole dish add the almond rice and sprinkle the top with shredded mozzarella. Place it under the broiler for 5-8 or until you see the cheese gratinated. Serve and enjoy!

Tip- Wash the rice with water on a strainer, this helps remove extra starch and dirt.

Tip- You can purchase already roasted almonds for time saving preparation.
