Sweet & Sour Spinach Saute

Ingredients

½ Cup of onions {chopped}

1/3 Cup of raisins

3 Cloves of garlic {minced}

1/3 Cup of almonds {chopped & toasted}

1 Tablespoon of olive oil

5 Cups of spinach

1 Tablespoon of balsamic vinegar

½ Teaspoon of salt

Preparation

Toasting Almonds

In a small pan add in the chopped almonds and toast at a medium-low heat for 2-4 minutes, set aside for later use.

Preparation

In a large pan add in the olive oil, onions, garlic and 1/8 teaspoon of salt. Saute at a medium-low heat for 2-3 minutes; add in the spinach and cook until it has reduced down. Once reduced add in the raisins, balsamic vinegar and ¼ teaspoon of salt. Stir and cook for another three minutes. Lastly add in the toasted almonds and serve.

Tip- When serving the sauté spinach you could exclude the almonds to the hot mix and just sprinkle it on top when you’re ready to serve.

Tip- For the almonds you can also roast them under the broiler on low heat for about 2-4 minutes depending on your oven temperature.
