Color Me Salad

Ingredients

1 Cup of mango {chopped,bite size}

1 Cup of red bell pepper {chopped, bite size}

1 Cup of green tomato {chopped, bite size}

¼ Cup of celery leafs {whole}

1/8 Teaspoon of black pepper {optional}

4 Tablespoons of lemon juice

¼ Teaspoon of salt

3 Tablespoons of olive oil

2 Teaspoons of honey

Preparation

In a small bowl mix together the lemon juice, olive oil, salt and honey until emulsified; set aside for later use. In a large bowl mix together the mangoes, peppers, and tomatoes. Pour the dressing over the mix and add the black pepper. Once plated add the top with celery leafs. Serve and enjoy!

Tip- When preparing the dressing make sure to place it in the fridge when done emulsifying.

Tip- Place vegetables in the fridge so that salad maintains its cold coolness.
