Hoisin Steak Skewers

Serves 4 Main Courses Hoisin Steak Skewers

Ingredients

1 1/2 Pounds top sirloin or 2 [1lb.] pieces of new york strip steak boneless [cut into 1 ¼ inch cubes or into large chunks, trim excess fat]

1 Pint of Cherry tomatoes 20-25 count [wash, pat dry, leave whole]

4 Medium yellow squash [cut crosswise into ¾-inch thick slices or large chunks]

1 Large red onion [cut into 1 ½-inch pieces or large chunks]

2 Long Scallions [Thinly sliced & used for decoration]

 

Steak Marinade

¼ Cup of vegetable oil

¼ Cup of red wine vinegar

¼  Cup of hoisin sauce

1 Tablespoon of granulated garlic powder [non-salt]

1 Teaspoon of kosher salt

1 Teaspoon of crushed dried mint

1 Teaspoon of dried oregano

 

Vegetable Marinade

¼ Cup of vegetable oil

1 Teaspoon of dried oregano

1 Teaspoon of dried basil leaves

½  Teaspoon of cumin [optional]

1 Teaspoon of kosher salt

 

Tools needed

8-10 Bamboo/wooden skewers [soak in warm water for at least 25 minutes]

Or

8-10 Metal Skewers

Cooking spray [if doing indoor grilling]

Grill pan or outdoor grill

These Asian inspired skewers are the perfect mix of savory, sweet and smoky. The hoisin sauce based marinade takes dish to another level. Make these skewers indoor or outdoor for your summer dinner and you’ve got yourself a winner!

Preparation

- Start by placing two medium bowls onto your counter, one would be for the veggie mix and the other for the steak marinade.

- In your medium bowl place in your steak chunks and start by adding all your steak marinade ingredients [see above]. Mix until incorporated and place into the fridge until ready to use.

- On your second bowl start by adding your whole cherry tomatoes, onions and squash. Place all your vegetable marinade ingredients [see above] into the bowl and toss; set aside.

- Thread the meat onto the skewers, alternating them with the marinated tomatoes, squash and onions.

- Prepare your outdoor grill for direct-heat cooking. Coals must be over a medium-high heat almost to the point of the coals being gray; before placing your skewers make sure to oil the grill racks generously.

- If using your grill pan for cooking indoors, simply turn your stovetop to a medium heat and spray your grill pan with cooking spray; you can use regular oil just make sure all sides are covered in oil to avoid sticking.

- Grill the skewers onto the direct heat; if your outdoor grilling place the grill lid on and let it cook [about 8 minutes for medium rare] turning occasionally until your desired preference.

- If your indoor grilling you can cook the skewers on a medium-high heat grill pan and occasionally turn the skewers on each side [8-10 minutes for medium-rare to medium depending on the steak].

- Serve your skewers with your favorite side items and enjoy!

 

Tip - Using a gas grill for your skewers? Preheat all burners on high [covered] for 8-10 minutes. Reduce heat to moderately high and grill skewers, covered, turning over occasionally [5 to 6 minutes for medium-rare].

Tip – The marinated steak can be left to marinate for up to 24 hours. The more it marinates the better it taste.

Tip -  Skewers can also be cooked on an oiled broiled oven-proof pan, just make sure to check on them periodically by turning them on each  side and the pan must be about 4 inches away from the heat.
