Mango Dressing1 1/2 Cups Dressings + Sauces
1 medium mango [1/2 cup, peeled and diced]
¼ cup of rice wine vinegar
3 tablespoons of fresh lime juice
1 teaspoon of mustard
½ cup of oil
2 tablespoons of cilantro [chopped]
In a blender or food processor place in your mango, vinegar, lime juice and mustard. Blend and slowly start by pouring in your oil. Whiz until emulsified and thick. Place the finished dressing into a small bowl and sprinkle in your chopped cilantro, stir and set aside until ready to use.
Tip - This dressing can be stored for up to one week.
