Chocolate Cocoa Mousse |Vegan|Servers 4 Sweets
3 Ripe avocados [halved, pitted & scooped]
6 Tablespoons cocoa powder
1/2 Teaspoon of cinnamon
1/3 Cup of honey or agave syrup
2 Stevia or splenda packets [optional]
1 Teaspoon vanilla extract
4 Mint leaves [garnish]
Food processor or blender
Small scoop or medium spoon
4 Serving cups
Place your avocados, cocoa powder, cinnamon, honey, sugar and vanilla in a food processor and puree until smooth. Using your scoop or spoon fill the serving glasses about half way up with the chocolate cocoa mousse. Once filled place into your refrigerator and let them set for a minimum of 30 minutes.
Tip - This pudding can be made a day ahead and left in the fridge.
Tip – For decoration you can place one cinnamon stick into each serving glass or you can add a sprig of mint leaf in each glass for a fresher topping.
