Blueberry & Coconut Overnight OatsServes 1 Breakfast
1/8 Cup of organic shredded coconut
1/3 Cup of organic rolled oats
1/3 Cup of organic blueberry Greek yogurt or vegan blueberry coconut yogurt
1/3 Cup of organic almond milk
1 Teaspoon of raw organic honey [optional]
1/4 Cup of berries of your choice
1 Tablespoon of shredded coconut
1 Teaspoon of chia seeds
1 Tablespoon of vegan chocolate chips
In a medium bowl pour your almond milk, blueberry yogurt, rolled oats and honey (optional) together. Mix with a spoon and place the coconut shreds on top. Cover your mixture and place in the refrigerator overnight or for a minimum of 2 hours. Once the mixture is set, top of your overnight oats with your choice of berries, shredded coconut, chia seeds and chocolate chips.
Tips - If your on the go you can simple pour your oat mixture into the mason jar, store it in the fridge and you’ll have a grab and go breakfast the next day ahead.
