Ingredients

1 Lb. Fresh Black Mission Figs [leave whole & stem on]

½ Lb. Prosciutto [thinly sliced]

 

Basil Salt

½ Teaspoon of dried basil leafs

½ Teaspoon of Kosher salt

¼ Teaspoon of ground peppercorns

 

Honey Glaze

1 ½ Tablespoon of olive oil

2 Tablespoon of honey

 

Tools

1 Package of bamboo picks or toothpicks

1 Large cookie sheet or a jelly roll pan

1 Large cooling rack

1 Pastry brush or cooking brush

Preparation

Start by turning your oven to a high broil. Next pour 2/3 cups of water onto a medium plate and place the bamboo picks inside the water to submerge, let them soak for at least 5 minutes. In a small bowl pour in the olive oil and honey. Mix to combine and set aside. In another small bowl add in the dried basil leaves and kosher salt; mix with a dry fork and place to the side for later use. Cut the prosciutto into strips that are just long enough and wide enough to wrap around the figs. Wrap each fig with a prosciutto strip and skewer them with your bamboo picks or toothpicks to secure them. Once all the figs have been skewered get your cooking brush and dab the honey glaze onto the top and sides of each fig. Next place your cooling rack on top of your cookie sheet or jelly roll pan and start by placing the figs on top of the rack making sure to leave some space in between each fig. Place into the oven and broil for 5-8 minutes or until the tops of the prosciutto look nice and crisp. Once you’ve taken the figs out of the broiler dab a little more of the honey glaze on top of each fig and sprinkle the tops with your basil salt. Serve and enjoy!
