Oven-Fried Chicken
Serves 4 Main Courses- Ingredients
8 Drumsticks {skin-off & patted dry}
½ Cup of Mayonnaise
1 Cup of flour
1 Cup of Panko Breadcrumbs
1 Tablespoon of dried oregano
1 Teaspoon of salt
1 Teaspoon of ground cumin
1 Teaspoon of paprika
¼ Teaspoon of cayenne pepper {optional}
Cooking spray {canola}
- Preparation
- Preheat the oven to 400 degrees F.
- Place the mayonnaise and ground cumin into a medium shallow dish and stir until all is combined.
- In a large plate add in the flour, dried oregano, salt and mix.
- Combine the panko breadcrumbs, cayenne pepper and paprika onto another large plate and toss.
- Dip each drumstick onto the cumin-mayo dish.
- Then dredge it into the flour, coating it completely.
- Place the floured drumstick back into the cumin-mayo and coat.
- Lastly roll the cumin-mayo drumstick onto the panko breadcrumbs and set aside.
- Repeat this procedure for each drumstick.
- Set a rack on top of a foil lined baking sheet and spray the rack generously with cooking spray.
- Start by placing the drumsticks onto the rack; leaving space in between each piece.
- Lightly spray the chicken and place it in the oven for 35-40 minutes.
- Serve and enjoy!
