Ingredients

Noodle Salad

½ Package of Maifun Rice Noodles (cooked & drained)

2 (3oz.) Cans of chunk light tuna in water (drained)

¼ Cup of red onions (sliced thinly)

½ Cup of cucumbers (washed, peeled & sliced)

3 Tablespoons of fresh cilantro leafs (whole or chopped)

 

Dressing

1/3 Cup of rice vinegar

¼ Cup of smooth peanut butter

¼ Cup of soy sauce

1/3 Cup of sesame oil

¼ Cup of water {lukewarm water}

2 Clove of garlic {finely minced}

½ Teaspoon of 5-spice powder

¼ Teaspoon crushed red pepper

Preparation

Dressing

Place the vinegar, peanut butter, soy sauce, water, garlic and seasonings into a food processor or blender. Whiz and slowly pour in the sesame oil. Blend until the dressing becomes nice and smooth.

Preparation

Place the tuna onto a small bowl and shred it to bite size pieces. Meanwhile, in a large bowl place the noodles and all the vegetables together. Add in the shredded tuna and toss. Slowly pour in half of the dressing and mix. Pour the remainder of the dressing into a container so that each person can add more to their liking. Serve and enjoy!
