Coconut Chicken

Ingredients

Dry Rub

8 Chicken thighs

1 Teaspoon of cumin {ground}

2 Teaspoons of salt {fine kosher}

1 Teaspoon of ginger {ground}

1 Teaspoon of black pepper {ground}

 

Coconut Sauce

1 Tablespoon of coconut oil

1 ½ Cups of coconut milk

1 Medium shallot {chopped}

1 Cup of scallions {chopped}

1 Cup of parsley {chopped}

1 Teaspoon of cumin {ground}

¼ Teaspoon of clove {ground}

1 ¼ Teaspoon of salt {fine kosher}

1 Teaspoon of brown sugar

1 Teaspoon of ginger {ground}

 

Preparation

Dry Rub

- In a small bowl pour in all of the ground seasonings and stir.

- Sprinkle the seasoning mix on top of both sides of the chicken and set aside.

 

Coconut Sauce

- In a large sauté pan pour in the coconut oil and turn the heat to high.

- Add in the seasoned chicken and sear on both sides for five minutes.

- Once the chicken sears take the pieces out of the pan and place them onto a

    plate for later use.

- Lower the heat to a medium-low and add in the shallots, scallions, and parsley.

- Mix the vegetables and pour in the coconut milk.

- Add in the cumin, clove, salt, brown sugar, and ginger.

- Let the sauce simmer for five minutes.

- Add the seared chicken thighs onto the coconut sauce.

- Place a lid on top of the pan and let the chicken completely cook in the sauce

   for 20-25 minutes.
