Poached Shrimp

Serves 4 Sides Poached Shrimp

Ingredients

2 Pounds of large shrimp {without shells, deveined and with tails on}

2 Lemons {both sliced in half}

4 Bay leafs

1 Tablespoon of whole all-spice

2 ½ Teaspoons of sea salt or kosher salt

Preparation

Fill a large pot with water and turn it to a medium-high heat. Add in the bay leafs, whole all-spice, salt, lemon juice and lemon halves. Let it come to a slight boil. Once you see this happen, turn the heat to a medium-low and add the shrimp. Cook for 5 minutes or until the shrimp becomes visibly pink. Once the shrimp cooks drain the pot and place the shrimp into the fridge for 30 minutes or until the shrimp becomes cold. Serve with lemon wedges and cocktail sauce. Enjoy!
