Cherry Tomato Salad

Ingredients

Salad

1 Pint of red cherry tomatoes {sliced in half}

1 Pint of yellow cherry tomatoes {sliced in half}

1 Whole Cucumber {peeled, seeds scooped out & sliced}

¼ Cup of red Onions {thinly sliced}

1/3 Cup of fresh basil leaves {chiffonade or whole}

 

Dressing

1 Cup apple cider vinegar

6 Tablespoons of olive oil

½ Teaspoon of oregano {dry spice}

1 Teaspoon of dry mustard

½ Teaspoon of celery seed

Salt {pinch or to liking}

Preparation

In a large bowl add in all the raw ingredients, except the basil. Toss and place in the fridge. For the dressing place all of the dressing ingredients in a blender or food processor and blend until smooth. Once the salad is cool; drizzle the dressing on top and mix. Add in the fresh basil before serving. Enjoy!

 Tip- You can make the salad ahead of time, the only thing I would do is squeeze a hint of lime or lemon juice on the salad so it doesn’t brown.

Tip- Make sure to add the dressing right when your about to serve the salad.
