Mediterranean Chicken

Ingredients

 1 Whole chicken {Cut into 8 pieces, having the breast sliced in the middle}

6 Garlic cloves

4 Stalks of scallions {chopped}

2 Lemons {juiced}

½ Tablespoon of lemon zest

1/3 Cup of olive oil

Salt {to liking}

Preparation

Preheat your oven to 400F degrees. Place the garlic, scallions, lemon juice, lemon zest, and olive oil in a blender. Whiz until you see a smooth marinade. Season your chicken with salt and place in a large bowl; add the marinade and toss. Place the bowl in the fridge for 15-20 minutes. Remove the chicken from the fridge and in a large sheet pan place the chicken pieces making sure there’s enough space in between them. Place the chicken in the oven and cook for 55-60 minutes. Serve and enjoy!

Tip- I like serving the chicken family style decorated with fresh sliced lemons and mint leaves tucked on the sides of the plate.
