1 1/4 Cup Dressings + Sauces Pesto

Ingredients

2 Cups of basil {fresh}

1/3 Cups of pine nuts {toasted}

2 Garlic cloves

2/3 Cups of olive oil or grapeseed oil

½ Cup of freshly grated Pecorino Romano cheese or Parmigiano-Reggiano cheese

Black pepper {to liking}

Salt {to liking}

Preparation

Toasting Pine Nuts-

In a small dry pan add the pine nuts and toast on medium-low heat for 2-3 minutes.

Pesto-

In a food processor or blender add the basil, toasted pine nuts, garlic, and pulse until the mixture is roughly chopped. Add in the olive oil, salt and black pepper. Pulse until the mixture is green, smooth, and thick. Next, take the green sauce and pour it in bowl. Add in the grated cheese and stir until all is incorporated. Serve and enjoy!

Tip-  You can use this pesto as a sandwich spread, dip, pasta sauce, marinade, and much more..

Tip-   If storing for later use, make sure too add a bit of olive on top just enough to cover the pesto. Before serving stir the oil and add extra cheese if desired.
