Ingredients

1 Medium eggplant {sliced thin}

3 Medium yellow zucchinis {sliced thin}

1/2 Cup of heavy cream

1 ½ Cups of parmesan cheese {ground}

1 Cup of mozzarella cheese {torn, sliced or shredded}

1 ½ Teaspoon of garlic {powder}

2 Tablespoons of olive oil

1 Teaspoon of white pepper

1 Tablespoon of parsley {chopped}

Salt

 

Preparation

  Preheat your oven to 400 degrees. In a small bowl add in the heavy cream, parsley and 1/8 teaspoon of salt; whisk and set aside. Pour the cream mixture into the bottom of a 10-12 inch casserole dish. In a large bowl add in the eggplant,zucchini,olive oil, garlic, white pepper, and one teaspoon of salt; toss until all is incorporated. Next, start by layering the vegtebles on top of the cream base. Making sure to sprinkle the parmesan cheese on top of each layer. Laslty add a generous helping of mozzarella cheese on top of the last layer and place it in the oven for 45-50 minutes or until cooked {charred}.Serve and enjoy!
