Free-style Hummus

Serves 4-6 Dressings + Sauces Free-style Hummus

Ingredients

2 Cups of chickpeas

2 Bay leafs

¼ Cup of olive oil

½ Cup of tahini

3 Garlic cloves {finely chopped}

1 Tablespoon of smoked paprika

1/8 Teaspoon of cayenne pepper

1/3 Cup of lemon juice { 1 whole lemon}

White pepper to liking

Salt to liking

 

Preparation

Place chickpeas, 1 teaspoon of salt, 2 bay leafs, and 8 cups of water in a pressure cooker. Cook for 35-40 minutes {or until fully cooked}. Reserve ½ cup of chickpea liquid. Once done, drain the chickpeas and leave to the side. In a blender or food processor place the cooked chickpeas, liquid, tahini, garlic, lemon juice, paprika, and cayenne pepper together. Blend away slowly adding in the olive oil. Pulse until you see a smooth puree consistency {5 minutes}. Lastly add in the salt and white pepper {to liking}. Mix and place the hummus onto a bowl. Place the hummus into the refrigerator for 15-20 minutes. Serve it with a side of pita, baked chips, or fresh seasonal vegetables. Enjoy!

Tip – You can top your hummus with a light drizzle of olive oil and a pinch of paprika.
